Seriously, Does Anyone Here Actually Eat Brussels Sprouts?

Brussels sprouts may be one of the most argued-about vegetables at the dinner table, but there is a good reason people keep putting them on the menu. These small green vegetables belong to the same Brassica family as broccoli, cabbage, and kale, and they pack an impressive amount of nutrition into a relatively small serving.

One cup of roasted Brussels sprouts provides roughly 66 calories while delivering about 4 grams of dietary fiber. That same serving contains substantial vitamin C and vitamin K, along with folate and potassium, making Brussels sprouts far more nutritionally interesting than their humble appearance suggests.

Their fiber is particularly useful because dietary fiber contributes to normal digestive function and helps make meals more filling. Brussels sprouts also contain naturally occurring plant compounds called glucosinolates, compounds characteristic of cruciferous vegetables that continue to be studied for their biological effects.

The reason some people insist they hate Brussels sprouts often comes down to preparation. Boiling them for too long can leave them soft and intensify their distinctive cabbage-like flavor. Roasting them instead allows the outside leaves to brown while the inside becomes tender. A little oil, salt, pepper, and lemon juice is enough to transform them into a completely different side dish.

So yes, plenty of people really do eat Brussels sprouts—and they’re worth giving another chance if your only memory is of the mushy version served years ago. They offer fiber, vitamin C, vitamin K and other nutrients, and proper roasting can turn this famously disliked vegetable into something surprisingly flavorful.
